Turkey Egg Roll in a Bowl

Time for a new FAT LOSS GAME PLAN recipe! I've been obsessed with this recipe for the last several months -- both because it is super easy to make and because it's FREAKIN' DELICIOUS! I've made it a little differently every time, mostly experimenting with a variety of veggies or using pork or beef instead of the ground turkey...but I think this version is the best so far! Feel free to play around with it yourself and create a version that fits your tastes.

As usual, try to use the highest quality ingredients when possible. Especially when it comes to healthy fats like the mayo used in this recipe, you want to splurge a little and buy the kind made with avocado oil versus canola or other vegetable oils. I prefer this or this brand but check the ingredient list to ensure the brand you buy contains healthy fats instead of more harmful ones. This recipe fits nicely into the Clean Eating Phase of the FAT LOSS GAME PLAN (provided you don't indulge in wine alongside it like I do in the video;) with healing ginger, vitamin-rich cruciferous veggies, ground turkey for protein, and healthy fats for nourishment. This is one of those recipes that is so delicious you won't feel like you are missing out on the pleasures of food while you work towards your fat loss goals.

Turkey Egg Roll in a Bowl

Ingredients:

  • 1 tbsp olive oil
  • 1 pound organic ground turkey
  • 3-5 cloves minced garlic
  • 1 tbsp grated ginger
  • 1 small zucchini (grated)
  • 1 bag (10 oz.) Trader Joe's Cruciferous Crunch (kale, brussels sprouts, broccoli, green & red cabbage)
  • 1-2 cups bean sprouts
  • 1 bunch green onions (sliced)
  • 4 tbsp soy sauce
  • 2 tbsp toasted sesame oil
  • 1 tsp Cholula or Sriracha
  • salt & pepper to taste

Spicy Mayo:

  • 1/2 lime (squeezed)
  • 1 tbsp Cholula (or hot sauce of choice)
  • 1/3 - 1/2 cup avocado oil mayo
  • salt & pepper to taste
